No matter the fad, fashion or generation, iced tea remains one of the most popular summer drinks and in some areas, such as the Southern part of the U.S., it is a staple beverage all year long.
Your Grandmother may have brewed iced tea just as she did for the hot variety, by pouring boiling water over loose tea leaves in a ceramic teapot and then straining the liquid as she poured it over ice. It was best, of course, to let the tea cool before icing, but many didn't bother to wait that long.
As this drink became a daily menu item, the availability of teabags simplified the process. A popular method of making tea in the 70's was to brew condensed tea syrup that could then be mixed with water and would provide a cold iced drink on demand for several days. A standard saucepan was used to heat two quarts of water to a full boil and then removed from the heat and about 15-20 tea bags were added and allowed to steep for 15-20 minutes. The teabags were discarded and, if desired, sugar (a full cup!) was added before the syrup cooled. The concentrated tea was refrigerated and would then be mixed with four parts of water to provide a glass or pitcher of home made iced tea.
Also popular were environmentally sun tea jars. The gallon sized clear glass jars had study lids and a small spout located 2-3 inches from the bottom of the container. Filled with water and 8-10 teabags and placed outside in the sun for six hours or so, this method produced a clear tea product of excellent quality with no bitter aftertaste that occasionally occurred with the tea syrup method.
Small appliance manufacturers who had focused on coffee makers and electric tea kettles recognized the increasing popularity of iced tea and in the 1980s electric tea brewing machines were introduced. With size and ease of use comparable to coffee makers, these automated iced tea makers have since become a staple in many kitchens.
